I'm not too fussy about the type of food, so the only real miss I've experienced was a flat double metric where they weren't honest about when the rest stops would be open. A friend and I were riding my tandem and planning to start right when the event opened and set a pretty good pace. So we indicated our planned finish time and asked the organizers if the rest stops would have food/water available. We were assured twice that all the stops would be fully staffed and ready.

Fortunately we didn't completely trust them so we carried enough food and water just in case. We saw no people or supplies at any rest stop until the end of the ride.
