If you'r looking to simplify the drivetrain, you could start by simply removing the front derailleur, shifter and extra chainrings, and shortening the chain. Total cost: zero and you can always go back to the full 3x7 setup if you aren't keen. I ran my bike briefly as a 1x6 setup while building my 3-speed wheel, and found it to give an acceptable range.
