Gee, that would be six pit stops. We set up nine for a metric every year, and setup/takedown is less than 30 minutes per stop (not counting the portacans) so moving them overnight is hardly a feat.
Also, in NASCAR a big part of the race is running the tire as long as you can before it's time to change. Doing that with hydration would be very dangerous, and it's the sort of behavior you'd be encouraging.
No reason they can't hydrate from the neutral drink motorcycles. Restock points for those don't need to be anything more than a truckload of bottles parked off the road every few miles.
