They ride the bikes the team is contractually obligated to ride.

Top quality non-carbon bikes are generally made by low-production "boutique" builders who don't have the capital to sponsor a team.

I have no doubt that a pro-tour rider would do fine on an aluminum, steel, or Ti frame....but you are not going to see it for reason stated above.
