Ummm, selling you something and then switching parts is not just unethical - it is illegal. Unless it is in writing that you agree to any modifications a store is not entitled to "swap" components after a sale is made. If they say that the sale hadn't taken place I would just return the bikes. Then call the BBB and file a complaint.
