Bar set up is one of those personal deals like shoes and saddles. You have to figure it out for yourself.
It sounds like your 5600 set up was pretty average and unless you didn't like it's a good place to start. When I'm working on a new set up I usually try to come as close as possible to my old bike. I will tape the cables down with a little hockey tape for test rides so I can make easy adjustments. Bar wrap after I'm happy with the fit.
I will make sure I have my saddle set up before I work on the bars and shifters. Then work on getting the bars where I want in regards to the drops and tops. The last thing is getting the shifters to the right height/angle.
