i would start with a sealed hub at 130mm and see if i could whittle it down to 126mm. trouble is most cartridge hubs don't have threaded axles and multilength spacers...and complicating the problem is that many have oddball cassette carriers too.
you might take a look at White Industries 130mm road hub and see if they have a shimano compatible freehub. that way you could swap in a shimano 7 speed freehub, but i imagine that the freehub attachment mechanism is patented by shimano and rather than pay the premium for the patent usage WI have designed their own...
of course the simplest, quickest, cheapest way is to buy a 130mm and ram it in...and try to forget your dropouts a screaming for relief...
and tell your significant other that after a long, hard, frustrating search, you found something (expensive) that works. if she ever finds you laboring to mount the wheel in the too narrow dropouts, just mutter something that has the words, "bent" and "frame" in there...
