Looks like they came up with about 92 dB for 50 mph wind. My typical touring speed, 10 mph; typical Kansas wind, 30 mph; worst case, 40 mph -- doesn't even show up on the chart.

50 mph downhill on a long downhill road with no curves? (Where can I find one of those?) You'll hit the bottom in 15 minutes or less.

Sounds like this is not a safety issue, it's a mental toughness issue. Can't help you with that.
