Honestly, I don't understand why people ride pursuit frames on the road. I mean, they are fine for very small distances, but there's no getting around that saddle to bar drop unless you get a frame a few sizes larger than normal.

You don't really know what you're talking about. What you're saying would be true for a real pursuit frame from the good'ol'days, one that has a 650 front wheel. Otherwise the only difference between a lo-pro and a "normal" bike is that the lo-pro has a longer seat-tube. I have a Mash and a Kilo and my riding position is pretty similar on both, my Mash just has less seat-post showing and my kilo has a shorter stem.
