Jim, I contend you're overcorrecting for the issue. I applaud your motivation, but dude, the only (american)pro I know of that does rides that long on the regular is Adam Meyerson. Why do a 7hr ride when you can do a properly structured 3-3.5hr ride that a)lets you recover quicker and b)provides just as much if not more benefit to your fitness level?
How many hours a week are you intending to do at the moment? I dig wanting to ride your bike, and I definitely suffer from the same overmotivation issues, but it breeds inconsistency in training as eventually you can't handle the load and you're always tired, or you enter into a race tired and get all upset and spend a few days drinking and whining to all of your friends about how much you suck, etc. Understand that there are some cat4's racking up points that are putting in like 7hrs of work/wk on the bike.
