But when the start point is 105/Tiagra level it seems to be more challenging.

You are saying that SRAM Rival/Apex is much lighter but this crankset/BB is 840g/890g respectively and Tiagra on the other hand is 975g and I would not call extra 90-130 gramms to be a boat anchor.
The difference in cassette/chain combo between Tiagra/105 and Apex/Rival is not even worth to mention. Probably the swap of brakes and levers was a killer... and tires - of course 200 gramms right there. .
Just a couple of points to follow up. On the weight thing generally, my motivation wasn't so much to reduce the weight (all up) of an already lightish bike, but rather to tailor the bike to my preferences once I'd decided after a season's riding that it was a 'keeper'. The weight loss was a by-product of that process; I can 'feel' it, and it was confirmed by my LBS, who did a 'before and after' weight-in.

On the drivetrain specifically, this was a complete change-out: Apex crank (50/34 double) and GXP bb; front/rear derailleurs; shifters (10spd DoubleTap for flat bar); cassette and chain (Rival); cables. I don't know the exact weights (didn't think about it much), but I do know that a) the groupset as a whole is noticeably lighter than what it replaced, and is b) lighter as a group than current 105. Again, that's not why I changed it out; I like SRAM/'Double Tap' shifting; I didn't want to stay with a triple.

Same motivation re. the brakeset; the stock mini-vees were 'ok' ... the current set-up is far superior re. function/modulation/adjustment. It happens to be lighter, as one would expect, but most importantly it's just 'nicer' to use.

That's why I still have the stock wheels, stem, bar, and seatpost. All really are 'boat anchors', but they function perfectly well so they'll be the last to go
