You definitely like being clipped in. I do too. If I had it my way, I would never take off my cycling shoes but I think the constant clopping noises would drive everyone nuts. That, and they aren't too fashionable.
Here's my solution(s) to being able to clip in or not and keep the same bike. I've got one bike with the Shimano m324s.

I like these too, but significantly less so than the m324's. Any spot of moisture on the ground and my feet slip all over those damned platforms, but they wont chew up my shins or calves if I slip too far. The m324's are quill on the other side and will keep your feet pretty well locked, but I know a lot of people do not like quills.
Both bikes that have these I use for commuting, weekend trips (and extended tours once I can get some time off), around town stuff, errands, and some seriously long seriously serious road rides (although they're totally Fredly whilst road cycling).
As far as shoes are concerned, I just use a pair of Specialized MTB shoes that look more like road shoes. They do get uncomfortable after a while, though. I really don't like the hiking boot look of some of the more walkable SPD compatible shoes, but if that doesn't bother you then go for it. If it fits your aesthetic preferences more, then Vittoria makes a pretty stylish walkable SPD compatible shoe. I think it's just called the 1776.
