A tubeless clincher is just that, a clincher that you run without a tube. (You may be confusing tubeless with tubular, which is another thing entirely) If you choose this option, you are limited in your choice of tires (hutcheson and a couple of others). They are very difficult to get on the rim and they usually use sealant which can get messy if you flatten. You can run a tube, if you flatten or choose to. Many people question tubeless for road bikes....perhaps that is what the post above was referring to when he dissed the 7900s.
I have rode the ultegra version and they do have a nice ride - you can run at lower pressure as there is no risk of pinch flats.
I also have DA 7850 and they are an excellent wheel set. I suspect that the 7900 version is excellent as well. If you find you enjoy cycling, a nice wheel set paired with some nice tires is the best upgrade that you can make
