This is an awesome and very timely thread. I just bought a black CETMA frame from Clever Cycles. I'll be putting discs (based on this thread, probably go with 203's) and a NuVinci N360 hub. I'm going to have a local (Portland, OR Area) builder set up the box and another local company build a rain fly. Good times.

I've used Universal Cycles a few times (they are here in Portland as well). Great prices and friendly services. Definitely recommend them.
