Fit has changed as the US buying public's idea of fit has changed.
The US buying public sees TdF on TV, wants TdF bike fit (ie. racer).
In the old days, ie. C&V days, bike fit was more aimed at the general public's use of their bicycles - because most of us had never seen a race. So less bar/saddle drop - see Rivendell, for example, for a similar attitude applied in the present day.
