Use whatever you feel most comfortable with, but take Youtube with the usual grain of salt. If we attached statistical significance to every wreck we can find on YouTube we wouldn't bicycle, drive, walk, skydive, etc. Modern pedals can be adjusted for very rapid disengagement, but it's still possible to fall over when you're acclimating to clipping out; practice solves that problem. I hadn't ridden for 25 years prior to a few years ago and fell over one time in
my driveway when I was fiddling with a new cyclometer; I was clipped out, but lost concentration and the bike went left when I had unclipped on the right. 12,000 miles later (tandem and single) and not a single FDGB since.
