I've used a bucket pannier for peaches. I put 4" of soft foam in the bottom, and eggshell foam between layers of peaches. If they're really ripe, lower tire pressure reduces the sharpest shocks -- I ride 26x1.5" on my commuter, much more forgiving for fruit at 40psi than 80psi. Works well for picking blackberries, too.
