Never actually been to their shop, but the guys that run Nu Vision Cyclery are good guys, so I gotta put in a plug for their shop.
I race against the owners at all kinds of singlespeed races in SoCal, so it's a pretty safe bet that they carry singlespeed MTB stuff. Not sure about fixed-gear/track.
