Does the fact that the bottom of my shoe not touch the candy platform matter?
No. The platform on a Candy (or Acid, for that matter) is there so you can still pedal (to a certain degree) even if you are clipped out.
It's a mountain bike thing - it helps for getting going in technical terrain.
I have Acids on my MTB and my commuter (the commuter so I can ride it in street shoes if need be) but my road bike has Eggbeaters.
