I don't have the option to turn off the speed part, but if you know what gear you're in and your cadence, the speed kinda comes naturally anyway.
Sadly, I do know my speed within 0.1 to 0.2 mph for a number of cadence and gear combos. I try to just focus on the cadence though. Watching your speed is a great way to torture yourself.
