About wheels- I'd go with a good-quality 36 hole Shimano hub and a Mavic A719 rim (A319 or open-pro's if you're gonna use skinny tires). Bulletproof and good enough for loaded touring if it comes to that. Probably cost an extra 8 ounces over a lighter rim, but I'd go with straight and strong over lightweight any day. If loaded touring is in your future, then I'd cold-set the frame to accept 135mm hubs and move to LX hubs and butted spokes. Then it really will be bombproof.
