Thanks for the insights, PsychoHB. I ended up finding a long quill stem, but in hindsight, I agree it would've been wise to switch to threadless. I'm currently using a freakish stem extender because it was way cheaper than a Nitto Technomic for the added height. The front rack also seems like a great idea, considering my biggest complaint (maybe because of the stem setup?) is the "wobbliness" of steering. A wider handlebar would be preferable as well. No problems with the rear rack, though we'll see when I try to fit in my fenders.
All in all, I'm pretty pleased with how it turned out. The wobbliness is a dealbreaker though--I'm not sure if that specific to my geometry or my particular setup--but any advice would be appreciated.
