I think the FLO cycling website explains some of this. It's due to the imbalance of how wind at an angle affects the trailing & leading edges of the rim. The new shape provides better handling. A deep 'V' might be better for a perfect headwind, but there is no such thing as a perfect headwind outside the wind tunnel.
