Here's the thing a lot of people don't realize - 20 and 30 mph winds will blow you around regardless of the wheels. A rider on a bike is a big profile for wind and wheels make up a small part. I use 303's as my daily wheels. I've come back, switched to my tri bike with deeper wheels, my cyclocross with shallow wheels, and my fixed gear with box rims and I get blown around about the same. It takes practice to relax, feel comfortable, and know to correct for gusts.
