My favorites are a toss-up between:
-Kancamagus Highway, Rt. 112, between Lincoln and Conway, NH.
This is a very mountainous road and has one of the larger vertical rises on in the east. The West approach has a number of switchbacks also, which is why I recommend first-timers ride this one eastbound. A challenge.
-Errol, NH, to Rangeley, ME on Rt. 16, and also in Maine:
- A Loop involving Rangeley to Weld ( Rts 4 and 142 ) -> Rumford/Mexico and back to Rangeley on Rt. 17. Both the Weld area on 142 and the high ground north of Byron are absolutely exquisite, and due to the moderate height of outlying hills give extremely long views.
I'll have to second the Kacamangus Hwy in NH. it is the most stunning road I have been on here on the east coast and, oddly enough, Rte 3 going into Pittsburg NH is also quite stunning. It is known as "Moose Alley."
