Another ride I love is the ride up to Boulder Falls... Beautiful and the downhill is kick a.. not too many hairpins or switchbacks...
I'll give you Flagstaff, but Canyon up to the falls? That is one of the very worst roads to ride on in Boulder county.
My favorites roads/ride is from Boulder up Lee Hill Road, onto Left Hand Canyon towards Ward, then Peak to Peak down to Lyons, 36 back to town.
Flagstaff is the coolest ever short climb... also very close to town. I did it twice yesterday.
