the difference is the amount of cable pull.
V-brakes require linear 1:1 ratio pull levers, but road levers pull less cable. I think it pulls about half as much cable.

Alternatively, you can swap the brakes for some cantilevers, but that is more expensive, as you'll need the brakes + cable hangers.
