If I am on platform pedals, I would leave the bike behind and launch onto the cab. Hopefully it is a car and not a van. If I am clipped in, then I would go over the cab with my bike. Join the kids for some bike polo and you will get pretty adept at such moves.
While the poor driving of other road users isn't your fault, you shouldn't be surprised by it and should always have a plan to protect yourself. It can be a sort of fun mental exercise to always make sure you have an escape hatch. It also helps if you don't ride on your bike like a sack of potatoes. I'm not saying you are, but if you sit heavily in the saddle you won't be able to maneuver out of trouble. Little things like not setting your saddle too high can also help improve your ability to get out of trouble.
My own solution to this problem was to crash into the car and wind up in the hospital, followed by months of physical therapy. I don't recommend it. Nowadays, I just try to avoid high-risk streets at bad times. So far, that's been working out a lot better than the old plan.
