Bikes: '96 Litespeed Catalyst, '05 Litespeed Firenze, '06 Litespeed Tuscany, '20 Surly Midnight Special, All are 3x10. It is hilly around here!

Done properly #2 (full height V-brakes used with regular road brake levers or brifters and Travel Agents) work fine and will completely solve your interferrence problems with no negatives.
