I let that cook for a while and then added some freshly chopped mint and some freshly ground black pepper. The tomatoes were then smashed and the skillet was set to slowly simmer while covered. It should be ready in about 30 minutes.

I'm thinking that a pedestrian California Pinot Noir will go well with this. I have a "grocery store" Coppola sitting out as I type.
I love simple (well simple for someone of your skill at least) dinners like this. My girlfriend and I do variations of this quite frequently. Simple lightly dressed salads, then some version of pasta with a ''fun'' sauce.

Last night we played around with Farro. Wonderful grain.
