For commuting/touring, I'd say a Alex Singer or a Rene Herse. Both are relatively rare and proven tourist bikes.

For general light weight use, Confente, Poliaghi, perhaps an older Cinelli or De Rosa or Richard Sachs. All are great bikes and not common.
