I can do 50 miles, I've done it before with just the basic rides I do now.

If I feel this stress in my legs, does that mean I should rest the following day after a ride? Or do I need to toughen up?
Yes, if you can ride Mon, Wed, Fri (taking it easy) and then a long ride on Sat, that's pretty good.
