I have 105 and Apex. I think SRAM's rear shifting blows Shimano away. I think Shimano's front shifters blow SRAM away. How much of that is influenced by the derailers and how much of that is the shifters, I don't know. I guess one could go Shimano up front and SRAM in the back.
