Get Campy 8 speed ergos and a campy 8 speed rear derailleur. Campy 8 speed spacing is the same as 7 speed, so it should work just fine on your seven speed cassette. I think you could use any front derailleur with the campy ergos.

The campy 8 speed ergos look better than any equivalent shimano. IMHO.

And then get back to Arizona.
