Custom rigid 29er SS build advice

I am doing a custom build with a Surly Karate Monkey.

Parts I already have:
Frame
Salsa CroMoto Grande Maxle
Thomson Setback seatpost
Chris King headset
Lizard Skin grips

I was going to build my own wheels. Thinking about going red Hop Pro 2 hubs with white ZTR Flow rims. I can spend $650 max on the wheelset. If there is something else that I should also consider I would like suggestions. Maybe Mavic 719 rims...

I was thinking about getting the Hope Tech X2 Evo brakes though I think it would be overkill since running rigid I'll be going much slower.

I was looking at the 175mm 34T RaceFace Ride XC chainset, with a 17T cog.
