Question why the lower even paced effort first and the intervals the next? wouldn't one benefit from the hard effort with fresh legs the first day and the slower even one the next to knock out the soreness?

No, don't do that. I'm already suggesting more intensity at a weekend than I normally would, just because you haven't enough time for long easy rides and can only ride about three times per week. You want a rest day after the most intense effort. If you do the descending pyramid on the Saturday, my guess is that at your current state of fitness you won't recover well enough for you to maintain the tempo ride for 90 minutes on the Sunday.
