your perception of the amount of bend in your leg really doesn't mean anything. have someone at your lbs check out your seat height by using a goniometer. once they set your seat height for the optimum position, measure the center of the crank to the top of your seat (along the seat tube), and write it down to help you in the future.

then stop changing it, unless you change pedals, seat, shoes, etc (or if you shrink or grow).
