If you've never eaten alligator it's something you've got to try.

Also--wild boar. If you always thought bacon was as good as food gets, just wait until you eat wild boar bacon.

This weekend is Shreveport's annual Mudbug Madness festival, which may be one of my favorite weekends every year. I had crawfish tacos for the first time last night, pretty good. Also, lots of good jazz and zydeco music. And cheap, cold beer.
