OP...no real benefit of chopping them. As the other guys stated or implied, your bike doesn't fit if your flexibility doesn't allow using the drops.
You need a more upright frame to bring the drops into play. I have determined this as I have aged. Endurance geometry bikes with tall head tube make the drops usable and they are really great to have...but no good if below your level of flexibility.
Start with a riser stem. Consider an upright frame. Dropbars are probably the best overall bars...debatable, but many don't like them because they are too low.
