Weight on rear tire divided by pressure in tire = area of contact patch.
Area of contact patch divided by tire width = length of contact patch.

Higher width -> shorter length of patch, therefore less sidewall deformation and less rolling resistance.

We put a lot of weight on our tandem (about 500 for bike+riders), and ride 28s. We're happy, but haven't tried any other tires.
