You don't want to pry anything open. Just slide the pads out and slide the new ones in. Some are easier than others. A little spit or something can help them slide.

I can't say whether those will fit. Does the product listing say they fit Mafac?

I personally am not completely sold on the 'orange is better' thing. If they're set up right and reasonably fresh, they all work ime.
