Ride on, man! Single speeds are cool for sure. I myself find that I'm in the right gear for about 20% of my ride, but I dig it and that's why I ride it.
About the headset, I would not sweat about saving weight there - it really is moot. Just ride with what you have and be more concerned about rotational weight.
