I am not sure if these are better choices, but how about protein such as eggs, peanutbutter and a carb, be it oatmeal or toast or barley. I leave for work at 6am and eat after arriving at work each day. I bring my food from home. I makes small egg frittata's on the weekend, that look like muffins and eat them every day after getting to work. Along with my oatmeal and that makes for a very good breakfast for me.
I mentioned this to my wife and she said that she has made these in the past with an interesting twist. First of all, she doesn't use muffin cups/paper, what she does do is grease/spray the inside of the muffin pan, takes a thin slice of ham and presses it to the bottom and sides, then fills the ham with the frittata mixture and bakes it like that: the ham becomes the "muffin cup". However, it is best that there are no holes in the ham for the egg mixture to leak out.
