A couple of other ideas just popped into my head:

-Take a basic toolbox or tacklebox and secure it to the rack in some manner.
-Use a soft sided cooler/lunch bag. Apply heavy duty Velcro to the base of the bag and the top of the rack (best if doing this with a "fender top" or solid platform)- instant quick release system.
