It prevents wear and tear to the actual pedal. It's what your shoe is touching. If you've run through the plate, and started eating at the pedal body, Shimano doesn't warranty the pedal anymore, and they advise getting new pedals for safety issues. For $20 it's cool to have to worry about the plate anymore, and to shave a few grams.
They also look cooler.
