Professional fittings are good once you're ridden enough to get flexibility, strength, and stamina. If you are just getting started, your ideal position will change a lot.

Plus foot position is where most fitters start (or one of the first things). If you don't use clipless, a top level fitting is wasted. Even toe clips allows too much movement. The latest evidence shows non-float pedals/cleats is best for most people so a very stationary foot position is the foundation of a good fit.
