I do 12 miles minimum round trip daily commuting on undulating roads. 20 if I escort my wife to work on her bike (she commutes too a few times a week).
I commute about 12-15 mi/day, which isn't much, but can still do loaded tours in which I'm riding 65-90 mi/day, no problem at all. If you're in reasonably good, but not great shape, doing a century shouldn't be much of a challenge, as long as you're not trying to do it at time-trial pace. I think most commuters could do it at a moderate pace without hurting themselves at all. Just be sure you have a very comfortable saddle, multiple water bottles, and enough carbs on hand not to bonk.
