Just to state the obvious, the gearing is not the limiting factor here. At 39 kph in a 44-11 on a 26" wheel your cadence is only 80 rpm, so "spinning so fast [you] go anaerobic" is not the problem. Were you able to spin that gear at a cadence of 100 - still not all that fast - you'd be doing 50 kph.
The issue is being strong enough to turn that gear at that speed. On a mtb with its relatively upright riding position, that's extremely tough to do. If you can maintain a speed of 39 kph for an extended period I'd say you were doing very well. That's a decent speed on a road bike - 40 kilometres in an hour is a good standard for a time-triallist, and most people can't do it.
