Anyway, after putting a little more thought to the OP's question. Here are a few more guesses at future collectible/sought after items:

Ultegra 6600 seatposts (already pretty collectible IMO)

Shimano Yumeya Kits - rare as hen's teeth now...probably because they're so damned expensive and provide no real benefit.

Aftermarket brakes: Zero Gravity, ee, Feather, etc. (very popular a few years ago but seem to be on the wane)
