I cooked the pepper ring on a buttered pan for a few minuets over very low heat, then put a slice of tomato at the bottom with a slice of bacon coiled around it - which was cooked but not crispy - and let them hang out for a few more minutes before cracking the egg into the pepper ring and covering the pan, basically letting the moisure from the tomato "poach" it.
Be careful not to have the heat too high or the tomato will burn, the egg won't cook and you'll have a mess on your hands.

Today I put in a solid 41 miles. Got a new flat-ground speed record. Strava said 33.7 mph while carrying a MW Vandal full of interview clothes and u-lock. Not bad.
I may be getting a job as a builder at the Northbrook (north suburb) Performance Bike. Not great, but better than nothing, and not a kitchen. Supplement it with foraging, and I'll be set. I figured out money based on the offer and my foraging in the past. If I haven't ****ed it up too much, I'll be making as much as I did at my old job, working 40-50 hours a week, and getting awesome discounts on bike stuff, plus I'll get to ride through the Chicago Botanic Gardens whenever I work at Performance. Also, the shop is near the county line, and cigarettes are significantly cheaper up there.
Between cheap smokes (until I quit), cheap bike stuff, a thirty mile round-trip commute at one job and a bunch of hiking at the other, plus a somewhat normal schedule, I think this might be pretty ok.
